Low(er) fat raw vegan pad thai for dinner tonight! 

Spiralized:

  • Zucchini¬†
  • Yellow Squash
  • Sweet Potato

Chopped:

  • Bean Sprouts
  • Snow Peas
  • Carrots
  • Peppers
  • Brocoli
  • Mango

Sauce (split between two people):

  • 1/2 Mango
  • Teaspoon of Ginger
  • 1/4 red pepper
  • Splash of Orange Juice
  • 1 Date
  • 1.5 tablespoons of raw almond butter
  • 1/4 zucchini¬†
  • water as needed

Squeeze Lime. Eat. I split this with my mom but as you can see from our bowl sizes it wasn’t exactly a 50/50 split
